How do I change the priority of a task quickly in 2Do v3?

You can star / unstar or change the priority of a task without going into edit mode. Simply tap on the priority button (will appear as a down-pointing arrow when not set) that appears to the right of the task title to display Extended Mode. You can also use this to reveal multi-line titles, notes or multiple tags assigned to the task.
